At Ambiente 2026, Yaxell presented its broad range of Japanese Damascus knives, spanning classic chef's knives, santoku and utility knives, and a variety of specialized blade shapes. Visitors paid particular attention to the well-considered ergonomics of the knives: perfectly balanced handles, seamless blade-to-handle transitions, and a clean aesthetic all contribute to precise, controlled cutting — delivering an exceptional feel, comfort, and everyday versatility.
Sunago: A New Knife Series with a New Steel
The highlight of the fair was the debut of the new Sunago series, set to launch in May 2026. With Sunago, Yaxell expands its lineup with an elegant collection crafted for the most discerning users. The three-layer blade is made from Ginsan steel ("Gingami") — a stainless Japanese steel celebrated for its fine grain structure, excellent sharpness, and ease of maintenance. Ginsan combines the cutting performance of traditional carbon steels with the benefits of modern stainless materials, making it ideally suited for intensive everyday kitchen use.
Sunago also makes a striking visual statement: the deep blue handle, crafted from high-quality Pakka wood, is refined with a Japanese crest motif, underscoring the series' blend of modernity and reverence for tradition. The restrained design language and harmonious proportions make Sunago a knife series that unites functionality and aesthetics at the highest level.
